For Valentine's Day I {LOVE} to bake/cook...
Now if any of y'all have been reading my blog long, you know that I am NOT a baker or a cooker. I burnt instant mashed potatoes in 9th grade for heavens sake! (and I still get it about that, too!) I'd like to improve...maybe I'll pay a visit to my Nana's...she's the BEST!
However, there are two recipes i'd like to share with y'all today.
First--Red Velvet Cake Balls.
oh my word--these little things are so wonderful!!!! My sister got the recipe from Kelly and they are so wonderful!!!
You'll need: A box of cake mix, cream cheese icing, and white chocolate. (you can use milk chocolate, but white is much better with these!)
Bake the cake in a cake pan just like the box instructs. Once it's cooled, crumble up the cake into a mixing bowl. Put the cream cheese frosting in with the crumbled cake.
--Side note--we make our own icing, but I'm sure the can works as well.--
Our icing is 1 package of cream cheese, a box of powdered sugar and 1 stick of butter. mix it all together.
Mix the cake and icing together (using your hands is probably the best way, but it will get a little messy!) and then roll it into about quarter size balls.
Once it's rolled into balls, melt the chocolate you're using, then get ready to dip those things!
We use the white chocolate bark, and break it into pieces and melt it in the microwave. But be careful not to burn it!
It's also better to let the chill first, possibly in the freezer for just a little while to make sure they don't fall apart when you're dipping them.
The second is my Momma's Nutella Ice Cream. She made this about two weeks ago and it was wonderful!!!!! Of course, I love Nutella and can eat that stuff off a spoon! If you've never tried it, please find some..I promise you will not be disappointed!!
1 1/2 cups of nutella
1 can of eagle brand condensed milk
2 pints of heavy whipping cream
1 quart of half and half
1 cup of sugar
mix all the ingredients together and put it in the ice cream maker.
don't forget the rock salt!!!
